What’s with VPN technology? Install a SBC and get it over with. Nowadays, what possible reason would you have for not using a SBC?

SBCs do have a place in the network, but it's not always needed. Call Admission Control (CAC) is one function lacking in many SBCs, which is an important feature for limited bandwidth small branch offices to ensure call quality.
Also, we have many endpoint client negotiated protocols that are simpler, such as STUN.
In the end it comes down to cost vs. features needed vs. features wanted for future growth. If SBCs today are plug'n'play, then perhaps putting one in the network and forgetting about it may be useful, so time/effort can be spent on other network quality tasks.
