I know you can do voicemail to email if you have Exchange server. But what do you do for people with hosted mail. I have a customer that is hosted through GoDaddy. They gave us the static to the server but won't give us the subnet. Any ideas?

For customers hosted through GoDaddy or other hosted email providers, setting up voicemail to email typically involves configuring the email notification settings within the voicemail system itself. You'll need to enter the SMTP server address provided by GoDaddy (often something like smtp.secureserver.net) and authenticate with valid credentials for the email account receiving the notifications.
