I currently have an IP500 V2 with 6.0(14) firmware. Can anyone advise on my firmware upgrade options, can I upgrade it to 8.0?

Yes, you can upgrade it, but you should contact an Avaya Business Partner, because you're also going to need to purchase an Upgrade license and possibly an Essential Edition license. If you do it the wrong way, you could possible make your system non-functional until the proper licensing is applied.
